After Yamaguchi Ramen opened it immediately found a following in 2013... even in the competitive area of Takadanobaba area. Like any eatery in Japan that is popular and small (in this case, there are only 13 seats around a U-shaped counter), you have to get there early if you don’t want to wait around too long for a seat during lunchtime. Also, Like many other ramen joints in Japan, you order via a vending machine at the front of the store which provides several chicken ramen choices. On the menu are 'Oigatsuo Chuka soba' (¥750 and up), with kelp and bonito stock mixed into a chicken base; and 'Tori soba' (¥750 and up), with a soup made from generous portions of chicken meat and bones. The unique feature of the 'Oigatsuo' is its strong bonito-flavoured, soy sauce-based soup, while the 'Tori' is distinguished by its flavour- and fragrance-packed soup. The chefs are particular about using quality stuff like hinai-jidori chicken, helping to lift Yamaguchi over its competition. The "chashu" is fantastic: large pieces of chicken coated in starch for a slippery and soft texture.
