It's quite a walk from Machida station or but you won't be let down by this award-winning noodle house that really should be much closer to the station. "Shinka" means salt and this noodle shops base soup is salt-based with a full flavor. The soup also contains chicken-based dashi seasoned with 'flying fish' from Nagasaki and finished off with other delicious seasonings. Combined with medium-thick straight noodles, this is a masterpiece worth making the trip for. On repeat visits, try going for their "Niboshi" or "Tsukemen" versions.
